White Chocolate Cereal Marshmallow Cookies

Something magically delicious happens when you bake dried cereal marshmallows into cookies. They soften and melt scrumptiously into the cookies. I was so excited to find out that the artisanal vegan marshmallow brand Sweet & Sara makes their own amazing classically nostalgic cereal marshmallows!
Ingredients
1/2 cup vegan butter
1 tablespoon vanilla
1x vegan egg substitute (I used Follow Your Heart VeganEgg as directed)
1/2 cup granulated sugar

3/4 cup brown sugar
2 cups flour

1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup vegan white chocolate chips

3/4 cup dried cereal marshmallows (I used the ones from Sweet & Sara)

Directions
Preheat the oven to 350°F. In a medium bowl, mix together butter, vanilla and vegan egg substitute until smooth and fluffy. Incorporate the granulated and brown sugars. Then, gradually mix in the flour, salt and baking soda. Finally, stir in the white chocolate chips and 1/2 cup cereal marshmallows with a spatula.

​Roll the dough into tablespoon-sized balls on a baking sheet lined with parchment paper. Press the remaining 1/4 cup cereal marshmallows into the top of the cookie dough balls. Bake for 15-20 minutes. Allow the cookies to cool and enjoy!
