As Erin McKenna says, "It's really, really hard to make a good vegan brownie", and I agree! I absolutely love the brownie bites that she serves up in her Lower East Side bakery, so I naturally wanted to try and make them for my family in Cincinnati for a Christmas party, using a recipe I found on Food and Wine:

Ingredients
Vegetable oil spray
1/2 cup plus 2 tablespoons Bob's Red Mill 1:1 gluten free flour
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1 1/4 teaspoons baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1/2 cup applesauce
1/4 cup canola oil
1 tablespoon pure vanilla extract
1/2 cup dairy-free chocolate chips

Read the recipe on Food and Wine here: http://www.foodandwine.com/recipes/brownie-bites

I followed the recipe as written, with the exception of using Bob's Red Mill 1:1 instead of the gluten free flour plus xanthan gum separately (although I'm sure that would work just as well). I also added in a pinch of cinnamon, cardamom and cayenne pepper for a little bit of holiday flair. I was so impressed with how these tasty morsels came out, and most importantly, my entire family loved them!
