This elegant festive salad with chopped apples, candied walnuts, crumbled cheese, dried cranberries and pomegranate vinaigrette is easy to throw together in no time, and can be enjoyed any time of the year.

1 cup walnuts, chopped
1/2 cup brown sugar
1 tablespoon vegan butter
mixed greens
apples, sliced

Directions
To make the candied walnuts, heat a medium non-stick skillet over medium heat. Add in butter, walnuts and brown sugar. Stir frequently for 5 minutes, making sure all of the nuts are coated. Turn off the heat and immediately transfer the nuts to a sheet of parchment paper and separate them to keep them from all sticking together. Set them aside and allow them to harden for 5 to 7 minutes while you prepare the rest of the salad. In a large salad bowl, toss in mixed greens of your choice, thinly sliced apples, dried cranberries and crumbled cheese. Squeeze some lemon juice over the salad to add flavor and help keep the apples from browning before you serve. Add in the candied walnuts. Serve with pomegranate vinaigrette. Enjoy!
