This delicious hearty soup is comfort in a bowl.
Ingredients
1 butternut squash, peeled and diced
2 sweet potatoes, peeled and diced
3 carrots, peeled and diced
1 white onion, peeled and chopped
4 cups vegetable broth
1 tablespoon olive oil
1/2 teaspoon salt (to taste)
pinch of ground black pepper
pinch of ground ginger
pinch of cumin
1 clove roasted garlic
1/2 cup coconut milk (optional)
Directions
First, peel and chop the carrots and onion, set aside. Next, peel and chop the squash and sweet potatoes and set aside. Heat the olive oil in a deep pot over medium heat. Saute the carrots and onion for about 5 minutes. Add in the squash and sweet potatoes and seasoning, to taste. Add in the 4 cups of vegetable broth and stir. Bring everything to a boil, then reduce to a simmer until the vegetables are nice and tender (10-20 minutes). Now, the fun part: blend. With a food processor, blender or immersion blender, blend the soup until smooth, adding in the roasted garlic, coconut milk, and any additional seasoning to taste. Pour into a big cozy bowl and enjoy!
Tip: For entertaining, the soup can be kept warm in a slow cooker for several hours.
