Here's a lucky tradition to start your new year off right...with black-eyed peas. No, not those Black-Eyed Peas. The original black-eyed peas (which are actually beans) have been regarded as an icon of prosperity and good fortune for thousands of years. Whether or not you truly believe they will bring you luck, why not have a good good night making this mighty delicious stew!
Ingredients
1 tablespoon sesame oil
1 tablespoon vegan butter
3 shallots, peeled and diced
3 cloves garlic, peeled and diced
3 teaspoons fresh ginger, peeled and diced
6-8 carrots, peeled
3-4 sweet potatoes, peeled
1 teaspoon fresh thyme
3 15 oz cans black-eyed peas
1 15 oz can diced tomatoes
2 teaspoons soy sauce
pinch of paprika
salt and pepper, to taste
4 cups vegetable broth
1 cup chopped kale
1 bay leaf

Directions
First, heat the oil and vegan butter in a deep pot over medium heat. Sauté the shallots, garlic and ginger for about 5 minutes. Add in the carrots, sweet potatoes and thyme. Next, add the black-eyed peas, tomatoes, soy sauce and paprika. Add in the vegetable broth and stir.
Bring everything to a boil, then reduce to a simmer and add in the kale and bay leaf. Continue to cook until the vegetables are nice and tender (10-20 minutes).
