Ingredients
4 inches fresh ginger, chopped
1 1/2 cups sugar
1 cup water
Directions
In a small saucepan, bring the sugar and water to a boil over medium heat. Add in the chopped ginger and reduce to a simmer. Continue to cook for a couple of minutes until the sugar is fully dissolved and the ginger has infused into the syrup, creating a gorgeous golden color. Remove from heat and let cool. For individual use, you can strain the syrup into a squeeze bottle to distribute accordingly to taste into individual glasses of seltzer water. For entertaining, pour seltzer water into a large pitcher and strain the ginger syrup mixture into the seltzer. Pour over ice and serve. Optionally, garnish with fresh mint or a slice of lime. Enjoy!
